RED SALSA

Whip this deliciously spicy and fresh red salsa up in only about five minutes, grab those nachos you saved for your movie night and throw your ass on that sofa. Because that’s literally your favorite thing to do when you get home, right? Or nah? Fiiiine. Guess I’m the only one then.

P.S.: Can you believe this baby is completely oil-free, dude?

INGREDIENTS (for 2 people):

8SMALL TOMATOES

(OR 2 BIG ONES)

1GARLIC CLOVE
1SMALL ONION
1 HANDFULROASTED PEPPER

(OR SUNDRIED TOMATOES)

1 TBSPTOMATO PASTE
1 DASHSALT
1 DASHPEPPER
2 TBSPLEMON JUICE
1 HANDFULPROVENCAL HERBS

(OREGANO, PARSLEY, ROSEMARY, THYME, …)

+ Cut a cross in the skin of your tomatoes (only lightly and not cutting through the flesh). Pour some boiling water over them and let them rest for about 3 minutes. Now the skin should peel off easily. (If this is not the case and your tomatoes are being the same ol’ divas again, be patient and wait for a few more minutes.)

+ Combine your peeled tomatoes and all the other ingredients in a blender. Blend only for a few seconds.

+ Garnish with some fresh thyme or rosemary, or some of your provençal herbs mix if you will. Aaand enjoy.


+ You might as well enjoy the salsa with some pasta underneath or spread it across a warm tortilla (super fast tortilla recipe here).
